Irish cuisine is rooted in traditional and hearty dishes that reflect the country's agricultural heritage. Potatoes, in particular, have long been a staple of Irish cuisine, with dishes like colcannon (mashed potatoes with cabbage or kale) and boxty (potato pancakes) being popular. Traditional Irish stew, made with lamb or beef, and soda bread are also iconic dishes. In recent years, Ireland has seen a culinary revival, with a focus on using local, seasonal ingredients and incorporating modern techniques and flavors.
